The Best Healthy Cookies

These also toddler friendly cookies are my son´s favorite treat (and mine as well). They´re so delicious that you´ll want to make an extra batch to freeze up and have it always on hand (like I do).

Ingredients

  • 100g of coconut oil
  • 90g of date paste*
  • 2 eggs
  • 100g of oat flour or rolled oats (see notes below)
  • 90g of whole wheat flour (or non gluten flour mix)
  • 8g of baking powder
  • 2g of salt
  • 70g of chopped 70% chocolate

Instructions

  1. *You can make your own date paste by adding the same amount of pitted dates and water to a blender and mixing well until smooth.
  2. Combine coconut oil – it has to be in like smooth butter consistency, not solid or melted), date paste and eggs. Mix well
  3. Add the flour, oats and salt
  4. Add the chocolate and then combine the baking powder.
  5. If the mixture is too liquid, place it in the frigde for about 5 min so you can scoop it more easily.
  6. I like to make them with about 30g each – small ice cream scoop. Flatten them a bit and place it in your pre-heated oven for about 8min or until lighty golden.
  7. Place the cookies on a cooling rack – if you can resisit.
  8. Wait until they are completly cooled to freeze.

Notes

About the oats:

If you use oat flour you´ll get a more cake like cookie, softer and ideal for toddlers. But, if rolled oats you´ll get a chunckier texture and will problably need a bit of water to add to your dough.

You can also always substitute the chocolate for nuts, coconut shreds, chopped dates, goji berries, you name it! Besides, they´re vegan too (if you use vegan chocolate, of course).
